Tutorial Tuesday: Pecan Crusted Chicken



Here's what you'll need for this easy, fairly low-carb recipe:
1 cup flour
1 cup ground pecans
1/4 cup sesame seeds
1 tablespoon paprika
1 1/2 teaspoon salt
1/8 teaspoon pepper
1 egg (beaten)
1 cup buttermilk
8 boneless, skinless chicken breasts
1/3 cup butter
1/4 cup coursely chopped pecans
(I usually cut the recipe in half if I'm just cooking for me & my husband).



Directions:
1) Combine first 6 ingredients & mix.




2) Mix beaten egg & buttermilk together.



3) Melt butter & pour in baking dish.
4) Dip chicken in egg mix.


5) Coat well with flour mixture (turning to be sure all sides are coated).



6) Place chicken in baking dish, turning once to coat with butter.




7) Sprinkle with coursely chopped pecans.


8) Bake at 350* for 30-45 minutes.

  2. I just made some the other night. We had this at a restaurant in Cabo the first time with a Poblano cream sauce. It is so great and it is low carb too.
